Look at this woman: is she living in a big city? Is she on holiday? Or is she living on an island?
If you answered "probably the latter", you're right. Photographer Clement Chapillon tried to capture with his pictures the idea and experience of “islandness”, shooting on the Greek island of Amorgos for his latest book, Les Rochers Fauves. Look at the picture again: this "islandness" is just a feeling.
I think cooking is not that different: a great local meal can bring to the plate the land that's surrounding you and can make you travel far while you're sitting on a restaurant chair. Just a feeling, again.

British food at its Core

If you're in the UK, where would you go to dinner with the intention of absolutely nailing your first date? My no-budget answer would be Clare Smyth's Core. Three Michelin stars, excellent aesthetic, maybe a little cold, perfect for control freaks, somehow clean and romantic. Local products are the stars of a well-balanced food show. Chef Clare's only sin might have been just one: catering Harry and Megan’s wedding (but how do you say NO to that?). She survived Gordon Ramsey and Alain Ducasse and is making a point of serving British excellence with some style. Her plating style is the canon nowadays (watch her Lamb Carrot). Finally, she wrote the book many were expecting.
