The NH Healthy Recipe Cooking Challenge took place at UNH"s Thompson School on May 9. Teams were challenged to create a healthy school friendly recipe using dark leafy greens as well as other local ingredients. The winning recipe was a fruit and kale smoothie from Raidy Ovalle of Nashua North High School. Here's the recipe: 3/4 cup each frozen peaches and strawberries, 1/2 cup frozen blueberries, 1 cup plain fat free yogurt, 1/2 cup NH apple cider, 1/2 cup chopped kale leaves, 1T NH maple syrup. Place all ingredients in a blender, blend and serve! For more information about the competition and to find more recipes click here.
As part of the April Farm to Institution Summit held at UMass Amherst, the farm to school programs of the northeast states held a competition as a pre-summit activity. The Farm to School: Recipes for Success asked farm to school practitioners from the region to submit their best farm to school activity, lesson, strategy or project that improves food and farm education, school meal programs, farm to school connections and more. We received 30 entries and chose the top ten to feature at the summit and online. The winner was Liz Lichtenberg from Alton Central School in Alton, NH for her entry Iron Chef: Salad Challenge. Liz won $300 to put towards farm to school activities in her school. The other featured Recipes for Success can be found here. Take a look and be inspired!
Staff from the Seabrook School District were treated to a tour of The Farm at Eastmans Corner in Kensington last week. Besides having a year round farm store featuring local products from around the region, several greenhouses are growing tomatoes, peppers, eggplant, squashes and ginger! Some of this produce may end up in a school lunch. The barns on the property house goats, pigs and soon chickens. The Farm is open for schools to visit and the Farm staff are willing to come speak at your schools. There are plans to offer more educational programming for schools in the future.
