November | Kale

We provide ready-to-go materials for your classroom, cafeteria and community to promote the use of local, seasonal foods. November’s Harvest of the Month is kale! Kale is a very cold-tolerant plant; it can survive frosts and snowfall. Use raw, massaged kale as the base of a salad, toss it into a soup or bake it in the oven with a bit of olive oil, salt and pepper!

Kid-Friendly Eating Tips:
-Add thinly-sliced, raw or steamed kale to a pasta dish.

-Use kale as the base for a salad; you can mix it in with lettuce leaves. Massaging the leaves first makes them softer and therefore easier to chew.

-Make pesto by blending kale, like you would basil! Add it to pasta or use it as a sandwich spread.

-Toss kale leaves, stem removed, with olive oil, garlic, salt and pepper. Bake it in the oven at 350F for 10-15 minutes, and you get crunchy kale chips.
