Delta taps Goldbergs to revamp their food
VIA THE ATLANTA JOURNAL-CONSITUTION

✈️ Inside a commercial kitchen in Marietta, a crew of bakers makes bagels and challah bread familiar to patrons of Goldbergs delis — right alongside staff preparing tidy rectangular dishes of chicken marsala to be loaded onto Delta Air Lines planes as in-flight meals.

In the past two years, Goldbergs Group has expanded well beyond its bagel shop roots, cracking into the fast-paced world of airline catering thanks to disruption caused by the pandemic.

In a world where global giants like Gate Gourmet and LSG Sky Chefs rule, local favorite Goldbergs now serves flyers on Delta international flights departing from Atlanta.

As the pandemic drove airlines to pause most food and beverage service on flights and then pivot to ramp up offerings amid a rebound in travel, the situation has opened opportunities for smaller operators like Goldbergs.

Missed connection: 🥰 He was tall, dark-haired, had a sleeve of tattoos and one was definitely of an avocado with sunglasses riding a blue crocodile, reins in one hand and pounding a cold brew with the other. Last seen at The Daily, West Midtown ordering a breakfast burrito with impossible sausage (made this vegan swoon), an iced americano with oat milk (could be a little basic), and stayed for about an hour working from the back right table. If you saw him please call: (404) 500-0763.

Behind the Food: Ba+Me’s Xôi Mặn Sticky Rice

🍚 As it is in most cultures, in Vietnam, food is a love language. And while Lisa Bi from @bamepopup has a complex relationship with her family, food is the one thing that has always been at the center of her family life and a source of warmth. So it is not a surprise that Ba+Me’s menu goes beyond the gateway Vietnamese dishes of bahn mi and pho to include homestyle dishes like bánh xèo (crispy turmeric crepe), xôi mặn (sticky rice), and chạo tôm (sugar cane shrimp).

“I'm cooking food that my family and I eat at home,” she said.

Xôi mặn is a perfect example of homestyle cooking. Lisa says that not only does just about every Asian culture have a version of sticky rice, but so does every household. Some Vietnamese make it sweeter, some add pandan and some red bean flavoring.

For her version of the dish, she seeks authenticity in honoring the ingredients from different regions rather than making the most perfect version that an ‘auntie’ from the old country would appreciate. For example, she loves adding in pork floss that literally melts in your mouth like cotton candy.

Ba+Me will be popping up all over town with upcoming stops in O4W at Boggs Social & Supply on Sept. 12, in Grant Park at Buteco on Sept. 13, and at Eventide Brewing on Sept. 16.
