I hope you are enjoying the beautiful autumn weather.  Feels like it's time for sweet potato pudding.  



I have included the recipe and video demonstration below along with a bonus.

Many of you know how much I love making (and eating) fermented foods, like sauerkraut and kimchi.  My new favorite is coconut yogurt and it's fun and easy to make.  




It tastes great, swirled into the sweet potato pudding:

Sweet Potato Pudding

4 cups (1 L) raw sweet potato, peeled and cut into 1 1/2” (3.75 cm) pieces, (about 3-4 sweet potatoes)

2/3 cup (150 ml) sunflower seeds, soaked in water for 8-10 hours (or use the sunflower seeds from your staple stash of dehydrated seeds...described in this video)

1 cup (240 ml) raisins, soaked in water for 15 minutes

1/2 cup (120 ml) filtered water (or coconut water, if you have some)

5 dates, soaked in water for
15 minutes, pits removed

1 teaspoon (5 ml) vanilla powder
or vanilla flavoring

1 teaspoon (5 ml) cinnamon

1/2 teaspoon (2.5 ml) nutmeg

1/4 teaspoon (1.25 ml) Himalayan sea salt

1/16 teaspoon (0.312 ml) cardamom


1/16 teaspoon (0.312 ml) ground cloves
      
Drain sunflower seeds, raisins and dates. 

Place all the above ingredients in high-speed blender.  Run on high speed with tamper, for about 30 seconds, until pureed and smooth. 

Transfer filling to serving dish.
 
1/3 cup (75 ml) walnuts, soaked for 30 minutes, dehydrated and coarsely chopped

1/4 cup (60 ml) shredded coconut
 
Sprinkle walnuts and coconut over pudding and serve.
