FROM THE BOARD . . .
What would you think if you learned that the owners of the PNFC owe the Co-op $128,358 in unpaid ownership payments?  That was the figure in the Financial Report at the July meeting!
That’s working  capitol that the Co-op needs to purchase inventory, make improvements to the market, and pay our obligations: building & equipment lease, business purchase payments, labor costs, etc.  As we move slowly toward profitability, that unpaid amount looms large, like a road block in our path.
Can you help?  Can you pay off your owner investment, or make larger payments – at the cash register, online (not yet, but soon), snail mail, etc?
We owners are what make our Co-op strong and healthy, by paying our owner buy-in fee and shopping at our market.  The Co-op – We Own It!
The LOCAVORE DINNER was a rousing success!  â€œThank you!” to all of you who attended and enjoyed this wonderful annual event.  Big cooperative thanks to all the volunteers who helped put it on, especially Locavore Coordinator/Queen Percy and her Co-Coordinator Karen.  Exemplary work!
LATER THIS FALL . . . Let’s look forward to the Co-op’s 2nd Anniversary Celebration all day on Saturday, Oct. 26 at the market.  There will be all sorts of special things for everyone to enjoy.  AND the Annual Owner Meeting will take place upstairs in the afternoon (details later) with prizes for attendees!
Local Sustainable Choices
5 Minute Black Bean Taco Soup
Although this soup can be made from organic frozen corn, canned black beans and your favorite store-bought salsa the flavors soar when you include fresh ingredients like heirloom tomatoes, fresh cooked black beans and corn removed from the cob. Whether you use fresh or store-bought ingredients, this month be sure and take advantage of the Co-op's High5 Pick's 15% discount on its organic corn. Simply remove the kernels from the cob and add to create a scrumptious summer soup. If you have the time, use fresh heirloom tomatoes and cilantro for the salsa.
Serves two really hungry people (four people on a normal day). Add mixed green salad with slices of orange for dessert.
Directions
  • Black beans 2 cups, organic already made or 1 can from BPA free can (Eden is a good choice);
  • Sweet corn, organic 10 ounces 
  • Salsa 14 ounces  (
  • Organic corn tortillas (optional)
1. Brush tortillas with olive oil, add a pinch of Mountain Mama’s Tex Mex Mix if you’ve made some; otherwise freshly ground coarse salt and peppercorns are fine. Bake in 350 F oven until crisp (about 5 minutes)
2. In large pot, combine and heat beans, corn and salsa.
3. Garnish with chopped fresh cilantro and crumbled organic corn tortillas. 
Enjoy.
