SoBo Biscuits


Tofino is where my heart and my feet come home. I first visited this magical part of the world when I was a child. Many years later I rediscovered its magic. With its cleansing ocean waves, expansive landscape, and kind and hearty people, Tofino is fast becoming famous for its food. Leading the pack of amazing restaurants on the west coast is Sobo. Their skilled and jovial chef, Lisa Ahier has recently published a cookbook based on the modern restaurant's ocean-inspired fare. 

Of the many tasty recipes in this book, the biscuit recipe is by far my favourite. I make this almost weekly as a staple for family dinners and potlucks.
In less than 30 minutes (cooking time included) you will have buttery mouth-watering biscuits. Try them out for your next brunch or gathering and let me know what you think.

Ingredients
2 cups flour, plus extra for dusting the work surface
1 Tbsp plus 1 tsp baking powder
1 Tbsp sugar
1 tsp salt
1/2 tsp cream of tartar
1/2 cup very cold butter, cubed
3/4 cup milk

Preheat the oven to 400F. Lightly grease a baking sheet or line with parchment paper.

In a large bowl, sift together the flour, baking powder, sugar, salt and cream of tartar. Combine the butter into the dry ingredients by using two forks or a pastry cutter. Work quickly to blend the butter before it starts to soften and melt. The consistency you are looking for is like wet sand, with very small pea-like pieces.

Slowly add the milk, stirring with a wooden spoon to soften the dough. The dough will be slightly sticky. Turn it onto a lightly-floured surface and knead 11 - 12 times. The dough will get nice and soft, but don't over-knead or it will become tough.

Roll out the dough into a rectangle about 1 inch thick and cut it into eight pieces. I like to cut my biscuits into squares so I use all the dough. If a round shape is more to your liking, use a Mason jar top or a cookie cutter. You'll need to re-roll the dough in order to use it all if you go for a round shape.

Place the biscuits on the prepared baking sheet about 1 inch away from each other and bake for 10 to 15 minutes (I have found 12 minutes is perfect, but test for yourself) or until golden brown.

Best when eaten straight out of the oven with a little Devon cream and jam.
