We're excited about the new expansion, CORE team is busy at work, Canaan team continues travelling for exhibition period, spring is back & weather is beautiful, 10th anniversary celebrations continue... exciting news, facts, pictures, and delicious recipe all in our latest newsletter! 


We’re very happy to announce that Canaan is expanding its facilities at the Canaan Headquarters in Burqin to create more storage space & add new production lines to more efficiently handle the increasing business growth.  The new facilities, which is approximated to around 3000 squared meters, will have new building for almonds shelling line to uplift the almonds sector of Palestine, and provide additional space for a new olive oil & almond storages. The plans will be to double our olive oil storage capacities over the next three years. The second floor also planned to accommodate expansion of specialty foods processing and production and more space to accommodate staffing expansions over the next 5 years.  The plans also include a cafeteria, and workshops hall, all in-house! We’re going to have the new almond processing line, and widen our specialty foods development and offering. In this album, we will keep posting pictures of the building process, check it out and stay tuned for more! 

Canaan Centre for Organic Research and Extension (CORE) is proud to establish new partnership with Christian AID – UK to further help advance the goals of CORE in empowering rural communities in Palestine in organic farming.
One of the top priorities on CORE’s plate at the moment is increasing the almond production and overcoming the almond wasp, which is one of the main problems facing almond farmers in Palestine, claiming over 50% of the almond harvest. Check out pictures of workshops, field visits, and working with almond farmers to overcome this problem – all on CORE’s FB page.        

After very successful shows at KeHE Summer Selling & Product Innovation, Biofach, and Natural Products Expo West, Canaan is now getting ready for its April Shows in Malaysia, US, and Canada. Here’s where we will be:

Did you know that the oldest olive tree in the world exists in Palestine? Located in Al-Walajeh village in the Bethlehem district, experts say this tree is between 4000 and 5000 years old!
To this day, this tree continues to produce exceptional olive oil! Al-walajah tree is not just an olive tree, it is humanity heritage, ancient Palestinian traditions, and thousands of years old sustainable farming practices, all in a tree! CORE & its partners hope to do research on this tree & more… stay tuned for exciting news! 
This winter, Palestine had high amounts of rainfall, which has resulted in a colorful appearance and a great wealth of flowering plants spread over the hills and countryside. Palestine has been called the Land of Wild Flowers; anyone who has seen it in spring would award it this title! Check out a glimpse of the beauty of Palestine Spring in these pictures. 

Last month, Palestine Fair Trade Association (PFTA) farmer Mohammad Irsheid toured the UK in a series of events planned & organised by Canaan partners Zaytoun, for Fairtrade Fortnight. Mohammad met & talked to diverse groups of people who welcomed him very warmly & listened enthusiastically o the story of Palestinian farmers & the impact fair-trade has on their lives told in Mohammad own words & experience. Events were very well attended, audiences were very engaging, and the feedback was great!
On behalf of Mohammad & the PFTA, thank you to our wonderful partners Zaytoun for organizing this tour, and thank you to each and every person who contributed into making the events successful. A big thank you goes to all the hosts who welcomes Mohammad into their homes & showed an amazing hospitality.

Our 10th Anniversary celebrations continue with us all the way from Palestine to Germany! Last month, the Canaan team celebrated the first decade of Canaan’s existence and the launching of Canaan’s newest & hottest olive oil at Biofach, the world’s leading trade fair for organic food! The party took place at the Canaan booth, and attended by show visitors and many of Canaan’s partners from all over the world. Our products were sampled, our famous Maftoul salad & delicious freekeh were served while people enjoyed dancing, mingling, and meeting on the sounds of Palestinian music. It was indeed a great show & party!

Fish with Zaatar Tomato Relish

Here is an easy and delicious way to use Canaan Za’atar. This recipe works with simple side dishes – sautéed spinach, sliced cucumbers or crisp salad, and bread, rice or couscous. You need to start about 30 minutes before cooking the fish. Measurements are approximate; you can use more of anything, or substitute your favorite fish or onion.  Only the Za'atar is indispensable!
4 white fish fillets (about 1 pound)
1 tsp + ½ tsp Canaan Za’atar
1 small shallot or other sweet onion, chopped fine
1 large tomato, chopped coarse
3 tsp  Canaan olive oil
fresh-ground pepper to taste 
(Serves 2-4 people)
  • Pat fish fillets dry and sprinkle both sides with Za’atar, rub in. Cover loosely and refrigerate for up to 2 hours.
  • Meanwhile, mix the onion, tomato, olive oil, reserved Za’atar, and pepper to taste. Let sit for 30 minutes while flavors blend.
  • To cook the fish, heat 2 tsp olive oil in a skillet over medium heat. Add fish, presentation side down, and cook 2 minutes.  Gently flip fish and cook about 2 additional minutes, until fish flakes.
  • Serve with Za’atar tomato relish on top, or on the side, and pass extra at the table.
