Add a Taste of Summer to your Food with Sun-dried Tomatoes!
 



Summer is here, and another season for Canaan’s Sun-dried Tomatoes has started! Mandawi & Khalili local tomato varieties are carefully selected, washed, sun-dried, grinned & then blended with wild capers & organic olive oil to be made into our delicious Sun-dried Tomato Caper Spread.



This rich, tangy, robust, and smooth artisan is the full eating experience: texture, visual, scent, taste, in addition to being a concentrated source of nutrients, vitamins, and anti-oxidants.

Add a taste of summer to your sandwiches with this spread! Serve as a dip, or spread on bread or crackers, use on grilled or baked meats, fish or poultry, on baguettes or grilled breads, or top zucchini grilled, eggplant, onion slices. RAMADAN KAREEM FROM
THE CANAAN TEAM!

 
After a long day of fasting, nothing is like gathering together & sharing a meal in the spirit of the blessed month of Ramadan! Just like every year in Ramadan, Canaan organised a group Iftar for its employees and members of the Palestine Fair Trade Association. With delicious food, great company, and lots of laughs, the team enjoyed a great entertaining social gathering under the gorgeous Nablus skies. This Iftar comes to support the company's strong belief that the success and the continuity of the business is the result of strong relations among the team.  
 
In addition to the team-iftar, Canaan also hosted on its grounds a Ramadan Iftar to the orphans of Jenin, organised by USAID this month. See pictures of the Iftar here.

A WEEKEND RETREAT


Nothing is more meaningful than to finally be able to visit cities in your own backyard that you're culturally and historically connected with! The Canaan team enjoyed a group fun trip to Haifa, Ras AL Naqoura, Nahariya & Akka (Acre), many of us for the first time in our life! 

Starting with a visit to the gorgeous Baha’i Gardens in Haifa, continuing to the spectacular geological formations of the grottos in Ras Al Naqoura, and then refreshing & swimming in the beautiful waters of Nahariya, and ending the trip in a tour in the ancient city of Akka, a yacht trip, & a sea-food dinner overlooking the breath-taking view of the Mediterranean sea.

Ingest an extra boost for your body, mind and soul with Za’atar!
 
Imagine combining the flavors of oregano, thyme, sesame & citric sumac into 1 delicious, aromatic & herby mix… yum, that’s Za’atar! Super healthy, richly scented, & very aromatic, Za'atar is a versatile everyday spice blend & a must on every Palestinian breakfast!



Palestine Fair Trade Association (PFTA) women cooperatives have been very busy the past 2 months collecting fresh oregano & thyme from their fields, drying and blending them with roasted sesame seeds, ground sumac, and a touch of salt using ancient methods.

Zaatar has deep, nutty, and woodsy accents, while the sumac gives it a bright, acidic, lemony flavor, lending tartness to foods and tantalizing the Palate! Za'atar is most frequently used as a table condiment, dusted on food on its own, or stirred into some olive oil as a dip for soft, plush flatbreads. Mix with olive oil and spread on bread, or sprinkle on chicken, meat, fish, eggs, or salad.

In the Middle East, it is believed that Za’atar makes you smarter! Here’s some of Za’atar benefits briefly:
  • Thyme: an antioxidant that has anti-inflammatory properties that benefit brain function and the heart
  • Sesame seeds: contains calcium, copper and a type of phystoterol that can reduce blood cholesterol levels and boost immunity
  • Sumac: this spice is a burgundy red powder with citric-y flavor. It is an antioxidant as well and is known to soothe stomach upsets

NEXT ON OUR SEASONS-CALENDAR:

June was a very busy month for our farmers & women cooperatives in Za’atar making & sun-drying tomatoes. This month, our women cooperatives will be very busy rolling Maftoul as our farmers are getting ready to start almond harvest after Eid!

WHAT'S UP AT CORE?

Last month, Canaan Centre for Organic Research & Extension (CORE) held its Second Annual Advisory Board Meeting & its First Annual International Organic Agriculture Conference where they discussed plans for the advancement of the organic agenda in Palestine for next year, and put forward plans for international cooperation as well as cooperation with local institutions in Palestine. RECIPE OF THE MONTH:

Shrimp Pasta with Sun-dried Tomato Caper Spread 

Ingredients: (Serves 4 people)
 
1 pound of Pasta
1 pound of shrimps
1 jar of Canaan Sundried Tomato Caper Spread
4 Table Spoons of olive oil
2 cloves of garlic, slivered

Recipe:

Pre-cook the pasta.
Place olive oil in a skillet on a medium heat, add the garlic & shrimp, toss on high heat for about 2 minutes.
Add Sundried Tomato Caper Spread, & cook for 2 more minutes.
Then add pasta, toss & mix together for another 2 minutes.
Serve!
