At last month’s 13th Annual BC Seafood Festival, West Restaurant + Bar’s Executive Chef Bobby Milheron jumped at the chance to showcase his creativity in cooking with fresh catches from nearby waters in the Chef Challenge. Facing off against twelve talented chefs over two days and three grueling rounds of black box competitions, Chef Bobby won the judges over with dishes such as an Albacore Tuna and Side Stripe Shrimp Roll, Olive Oil Poached Halibut with Manila Clams, and a Geoduck Clam and Swimming Scallops Chowder.
Chef Bobby’s win comes as no surprise as he shares his passion for west coast cuisine through each and every dish he creates in the West kitchen.
