my name is Jon Fratschoel, I am your host at Ferndale Guesthouse & Restaurant. Many of you got to know our Restaurant over the past seven years, that we are on Achill Island now. For those who forgot about us: Never Mind, you can always pay another visit this year.

A word of concern: As it is very important for us to respect your privacy, you are welcome to unsubscribe from this Newsletter at any time. But before you do, consider how often we will be "bothering" you with what information:

Over the summer, we will send you a newsletter every 3 to 4 weeks, telling you a bit about our beautiful Island and it's neighbourhoods. But as I am sure, that you already know quite a bit about this part of the world, we will spice it up with some secrets. During the rest of the year, we will keep you informed about every 6-8 weeks.

Ferndale Feeling

To give you a little treat, even when you are unable to come and see us, we have prepared some recipes for you. And we will also present and recommend different wines, which will fit these fabulous dishes.

For those who prefer not to stand in the kitchen themselves, but enjoy the quite relaxation of a few days out, we will tell you about special offers and enjoyments. Some of which we have prepared exclusively for those who read our newsletter. You will also be first to know about our exciting new dishes and menus, which we will compose for you over the summer.

Last but not least, we will give you an overview of activities and events, that will take place on Achill Island

A short story about why we came
to Achill seven years ago

I discovered the West many years ago and as for many travellers to the far west of Europe, it stunned me. Standing on the shores of the great sea, I felt what many a man must have felt standing here: Finis Terra - "The End of the World". It was in a very positive way, that I had the feeling, that this was the end. The end of a long journey.

A few years later, the dream I had dreamt since I first stood on these shores, became reality. I had the chance of opening up our Restaurant. But to tell the truth, a part of me has never stopped travelling and searching. And this is where I draw my inspiration from. It reflects in our themed bedrooms and our -lets say "different"- approach to the Irish cuisine.

The dish we are presenting this month is an expression of this journey:

Recipe "Lamb - How the West was Won"

for 4 people

Ingredients

  • 800g to 1kg of Lamb Rack (ask your butcher to cut off the bone and prepare little steaks)
  • 2 tablespoons of Irish Honey
  • 2 tablespoons of Olive Oil
  • 1 teaspoon of salt
  • some pepper
  • 1 teaspoon of Chives
  • 1 teaspoon of Mint
  • 1 teaspoon of Lavender
  • 1 teaspoon of Garlic

Finely chop herbs and garlic and mix them with the Olive Oil. Add salt and pepper. Then marinate the lamb in this mixture for at least 30 minutes. Pan fry the steaks to your liking and serve with your choice of vegetables. Just before serving, you can flame the steaks with whiskey.

We recommend serving it with a Crème Fraiche & Cranberry Dip. If you want to add something special, try our Cabbage Mushroom Stir-Fry with Strawberries and Lavender Potatoes

Our Wine Recommendation:
The Charge, Bodegas Bascula, Rioja

The Wine recommendation of the Month is a Tempranillo & Garnacha from the Rioja region in Spain. This generally full bodied wine tastes excellent with hearty food like rack of lamb or red meats with herbal Infusions and creamy sauces.

Spain and its wine regions are producing some outstanding quality wines. These normally full bodied red wines with sometimes very intense, sometimes smoky or earthy textures go best with red meats and preferably with game like venison or exotic meats like Ostrich.

The Whites Wines are normally easy on your palate and rather soft. They are best slightly chilled on a warm summer evening with crackers or cheese. They also make a fine aperitif with some hint of peach or light Kir.

Right by the Atlantic coast, hidden in a small bay on Achill Island, you find the most westerly public garden in Ireland. Achill is situated on the Atlantic coast in County Mayo, due west of Dublin. An Evening public lecture, organised by the Achill Archaeological Field School. Stuart Rathbone of the Field School presents 'Excavations at Portrush'.
26th of May at 8.30pm at the Folklife Centre in Dooagh.

General Information: Opening Times & Specials for the coming Bank Holiday Weekend

Reservations are strongly advised at all times!

We are open all week from 6pm 'till late. Usually we take last reservations for about 9pm, but it is no problem if you want to make arrangements for a later time. Just give us a call: +353 98 43908.

Bank Holiday Weekend

Friday Late Dinner

On Bank Holiday Friday we are regularly taking reservations up to 10.30pm, allowing those who arrive late, to finish their evening in a nice atmosphere, with some exclusive food and a good bottle of wine.

Bank Holiday Monday Brunch

On Bank Holiday Monday we are open for Brunch at 10.30am. We will serve an extensive breakfast buffet with two or three light warm dishes, so that you will be invigorated for your journey home. Brunch including all coffees and teas will be served for 17.50€
