Dear Friends,

The season draws to an end and we want to finish it in style. This is why we created an end-of-season buffet for you, which will give you a taste of what was and what is yet to come (next year). We also finally have the program for our winter cookery courses.

With best regards,
Jon Fratschoel

Long gone - This years summer season break

Last week we went for our well- deserved break, after the summer season. Normally when we are having a holiday in Ireland, the weather turns to be just brilliant, and so it came to pass. I like to be pampered when I am on my holidays, and it is the most important time any one could spend with loved ones.

We went to Northern Ireland with friends and our dog Mowgli, as Heidi, my aunt, does not like to leave without the dog. We rented a house close to Beleek, Co. Fermanagh as it was promised to be an absolute heaven with Jacuzzi, sauna, steam power shower, and a lot of extras. When we arrived we were told that there was no Jacuzzi and there was no steam power shower! The house was beautifully restored and comfortable, but I was a little disappointed because of the promises.

I personally -and a lot of people who know me would agree- like to spoil my guests and try to make their holidays a memorable one. It is easy to just offer the normal things, but it is another approach entirely to make our guest's holiday a fantastic time. If I can achieve that I am happy and I feel it is all worthwhile. I hope I can make your holiday in Achill and Ferndale a memorable one, and with this hope I keep going all the time trying to improve my guests stay with us.

Recipe "Chicken Bake Atlantica"

Even with the beautiful late summer, I decided to go for a more autumnal dish. This dish I created for special friends of mine and they loved It and even though it might not be to everyone's taste there will be variations of that dish.

The recipe serves 4 people / Ingredients: chicken fillets, green bananas, mango chutney, shallots, garlic, sour cream, orange, lime, curry, coriander and chives.

Wine recommendations: Delicato white Zinfandel 2005

Fantastic with any spicy dishes are fruity rosé or white wines, like for example californian rosé or a White Zinfandel. There are a number of ranges available and I personal like the

Delicato White Zinfandel 2005 - It is an easy drinking slightly sweet and fruity explosion with hints of full berry and melon

If you can't find this wines, please contact us as we will be able to arrange a delivery to you. We also supply other wines from our extensive wine list.
