Your birthday wishes at Facebook and myCSL on Tuesday filled my special day with love and unicorn kisses. Thanks, pals! Over the past few years I've made an effort to do something really fun on my birthday. Last year, a day of rest and relaxation at Ten Thousand Waves in Santa Fe. This year, a day of hiking and vista viewing at the Mohonk Mountain House in New Paltz, followed by an Olympic ping pong match. Apparently I have some God-given talents in t  he table tennis arena. Who knew? As summer rolls out, fall rolls in and another magical year ticks by, I am filled with fire and gratitude for all the crazy sexy goodness in my life. That means YOU! Hope you have an amazing month. Come visit me! Speeches, power storming, coaching... I'd love to meet you.

Recipe of the Week
Sweet Potato Casserole by UnReFiNeD
 Ingredients:
-4 cups sweet potato, peeled and chopped into small pieces
-3/4 cup walnuts
-1/2 cup or a bit more of dates
-1/2 cup water (use the water used for soaking the dates)
-1 teaspoon ground cinnamon
Topping:
-3/4 cup walnuts
-1/4 cup agave nectar
-1/4 - 1/3 teaspoon salt
Preparation:
1. Soak the walnuts and dates overnight, separately.
2. Place the sweet potato, walnuts, dates, water and ground cinnamon in a food processor and process until smooth. Pour into a pie or baking dish.
3. For the topping, process the walnuts to a coarse consistency and mix in the salt and agave nectar. Add on top of the yam sweet potato mixture and serve.
