Vacation Vixen,
It's official, I'm on vacation! Ahhh. It's been a crazy sexy awesome summer filled with new projects and inspiring people. I dished about my biz savvy ladies in this week's Love List, so if you missed it, be sure to check out the details on Marie Forleo, Danielle LaPorte, Amanda Steinberg & Gabrielle Bernstein. They are tapped into some righteous entrepreneurial wisdom.
Speaking of tapping, I attended an Emotional Freedom Technique level one & two training this past weekend and it was a powerful ride. I will definitely be adding it to my coaching practice and books and will dish on my experience in the upcoming weeks. Until then, check out The Tapping Solution DVD. Lastly, I want to mention how important it is to take your self-care practice with you on the road this summer. If you're on vacation, make sure you are taking care of YOU so that you can lovingly and happily enjoy the company of family and friends. I'll share my on-the-road health tips in next week's Love List as well as a few nuggets from my trip to Boston (aka my 7 year scans). Zoinks! No worries, all is well...me and the little "c" are still living peacefully together. Love you!

Menu Magic
Corn cakes, wilted kale, and cheesy chipotle dressing by Rawxy
Ingredients:
Corn cakes
-5 ears of corn, remove corn
-1 green pepper
-1/2 tomato
-small piece of red onion
-2 tsp lime juice
-1/2 jalapeno
-handful of fresh cilantro
-1/2 T cumin
-1/2 T chili powder
-2 tsp agave
-sea salt to taste
-1 C of ground flax
Chipotle sauce
-1 avocado
-1 1/2 chipotle peppers (soaked in about 1/4 C water)
-2 T olive oil
-1 tsp stevia (or, use sweetener of choice)
-juice from one lemon
-1/2 T apple cider vinegar
-1/3 C sunflower seeds
-2 T nutritional yeast
-1/2 red bell pepper
Assembly:
-1- 2 bunches of kale
-1 tsp sea salt
Preparation:
Corn cakes
In food processor, combine all ingredients except corn. Pulse until you’re left with a fairly fine puree. Pour mixture into bowl and fold in corn. Add mixture back to processor and pulse a few times to break up the corn a bit (you want the corn to be somewhat chunky). Place mixture back in bowl and add flax meal. Mix until the flax has absorbed all of the excess liquid. On a non-stick dehydrator sheet, use a dessert ring or cookie cutter to mold mixture into cake-like shapes (approximately 10). Dehydrate overnight at 105 degrees.
Chipotle dressing
Combine all ingredients in a high-speed blender and blend until creamy. Add salt if you’re not making the wilted kale.
Assembly: Wash, remove stems, cut kale and place in a large bowl. Add salt and about 2-3 tablespoons of the chipotle dressing. Massage vigorously for approximately 5 minutes.
In a separate dish, add 1 T of chipotle dressing and .25 C of chopped tomato, mix well. In a large serving bowl, lay down wilted kale, corn cakes and top with tomato/chipotle mixture.
