Wondrous Watermelon,
This week I regained oodles of time by doing one simple thing: TV OFF! Instead of watching Entertainment Tonight, I splashed around with Lola in local swimming holes, saved a wounded birdie (who we named Treasure), took long evening walks in the woods, and enjoyed leisurely scrumptious meals and conversation at the kitchen table with my hubs. I can't believe July is almost over! What can you do to make the most of your remaining warm weather, fresh veggies, and long sunny days?  I'm trying to take notice of these gems by writing Love Lists, scheduling time with family, and putting my energy toward projects that make my heart sing (like guided online cleanses and juicy e-books for you!).  Ingredients:
-2 ripe avocados, cubed
-1 peeled cucumber, de-seeded and cubed
-Juice of 1 lemon
-Juice of 2 limes
-Juice of 1 orange
-2 tbs. fresh mint
-1/2 cup fresh cilantro, tightly packed
-1/2 cup RAW pumpkin seeds
-1/2 cup water
-1 splash sesame seed oil
-2 tbs olive oil
Preparation:
Place the avocado, cucumber and RAW pumpkin seeds into the food processor and process. While it is processing, add the lemon juice, lime juice and orange juice. Open the food processor and scrape the sides down. Add the cilantro, mint and sesame oil. Process again. I added the water a little at a time, just until the soup was smooth!
