Marmalade Ideas

Pancake Day will be coming up soon so when you have made your marmalade why not use some it to make a delicious pouring sauce for pancakes? Melt 6 fl oz marmalade in 6 fl oz water over a low heat stirring until smooth. Add 2 tablespoons butter and stir again until evenly combined. Serve warm with a stack of pancakes!

Glaze for Gammon To make a brilliant glaze for a cooked gammon or bacon joint try mixing 3-4 tablespoons chunky marmalade (home-made of course!) with 2 tablespoons soft brown sugar and 1 teaspoon mustard - I use my own wholegrain, but any will be OK. Remove the rind from the cooked joint and spread the mixture over the surface, pressing down as well as you can. Stand it on a wire grill over a roasting tin and bake for about 20-30 minutes in a medium oven, basting frequently. My son sometimes uses Plum Jam instead of marmalade but that's for the Autumn . . . Yummy!
